Ah I am still so glad you liked it! I really liked it to, I need to make it again soon... it's one of those things where the all the parts are good, but the sum of them is somehow incredibly tasty!

Amy!! YAY! I'm so excited that you did. I agree with everything you say and it's SO crazy how anti butter people are. And when people call it the French anomaly - its not an anomaly at all - cooking and eating some butter never did anyone any harm. Way better to make stuff that tastes good enough to share than to eat a whole pan full of apple sauce carob bakes or whatever... You know I still need to post about your quinoa tart - it was SO good. The only problem is I got all these great shots making it but forgot we were eating it at night so there all done with flash.. I need to just get over it and post though. It was SO good - and the perfect example of using veggies, some REAL cheese, some quinoa and some protein to make the perfect balanced meal.
NOW - THAT was an epic comment!! xox

Em I absolutely loved reading all of this. I also liked reading that "How I Eat" page--is that new by the way? Well whatever, your blog has been looking awesome lately.

I also hate when people judge some fats as being "good" and others as "bad" ... actually, it just really bothers me when people do that in general with food (how are handfuls of fat free yet sugar laden dried cranberries "good" but something like full-fat ricotta cheese is "bad"?) Anyway, since I tend to bake quite a lot of decadent-y things sometimes, people will gawk at the butter I use when baking up a treat. I always say "butter isn't bad for you!!!" and of course, like you said, no one really needs half a stick of it in their baked beans, but point is, it's nothing that should be replaced by flax eggs and canola oil in your diet. Sorry for this novel of a comment, I just really loved reading this!

Hooray for Full House AND Home and Away! This is really interesting... I get my sat fat from coconut as honestly, I can't stand the taste or smell of straight butter. If it's hidden in baking or something that OK, but otherwise I just don't dig it. Is that weird?

Heehee, I loved Full House!

I was also scared of butter for a long time - my parents were never really low-fat dieters, so we always ate butter and not margarine, but never much. I can't imagine how many pieces of dry toast I ate. Yuck. I love the Kerrygold butter - I haven't had butter that tastes like that in so long, it's so good!

I too ate plenty of canola oil, buttery spreads and "flax eggs," but feel so much better eating the real stuff! I still eat flax now, but usually on full-fat yogurt :-)

LOVE all this info. I have done a lot of reading on this topic myself and do not shy away from sat. fats at all. In the past I did a few nutrient analysis' of what I eat in a day and I'm upwards of 60% fat and have never felt better. And I also get more happiness from the foods I'm eating because they taste better. fat=flavor!
