Hi Bunny! SO great to have you reading and I'm so glad you liked the thighs. I basically sprinkle some rosemary and salt on a plate and then just rub the chicken thighs in it and then sort of pat down with my hands. (and then of course wash my hand VERY thoroughly and sanitize the plate and surrounding area). BBQ sauce sounds pretty great too! :)

HOLY HECK. I'm eating a little chicken thigh right now. It is GOOD and tender too. so SIMPLE.
tell me how do you get your rosemary spaced out so perfectly. Can you give me info-tip on your rolling the chicken into the spice technique? pleeease. I'm always too much globbed on, etc. Do you roll out some wax paper and sprinkle it or something? you know like that.

hahaaa Hubby fell asleep, I'm going to grab another thigh...I prefer ketchup or bbq sauce on my skins though !! :D

OKAY, i'm gonna try this...normally i rub butter on them because a site said butter makes it 'brown and get ' and those WERE REAAAAALly crispy, but not all of them or all the edges like. I've been looking and I love the way you explain everything in plain language and funny too. I can almost hear a voice LOL of course your accent would be like MY family, even though you aren't from my area. hahaaa

Very good blog, young lady. Very very GOOD.

I read what you said about carrying the bottle of hot sauce. It almost makes me cry. I have always been a hot sauce lover, drinker, tabasco my general favorite. When I was pregnant I craved spicy chinese food, and I would request a bowl of that hot crushed red pepper in oil sauce they serve at most asian restaurants and eat it by the spoon full. WELL about 3 years ago, I had a reaction to some medicine, like a very mild case of Stephens Johnson Syndrome classic type. It gave me a 'burning tongue syndrome'. At the time even a little black pepper burned my tongue. At first just yellow hot dog mustard made my tongue burn SO BAD I cried & one daub made it burn for an hour - the center of my tongue swelling up like a burn stripe from tip to back right in the middle.
GIIRL all i could eat was oatmeal or grits. Even an english muffin hurt my tongue (a raw one) because it scratched it!!!
Prior to this, I WOULD carry hot sauce with me & even knew what kind of hot sauce different restaurants USED.

anyway just now after 3 years, i have built up to A LITTLE louisiana hot sauce, the damn old lady/baby sauce. (sigh) it doesn't even TASTE GOOD...its like vinegar.
Before, I could pour out a good half a bottle the little tabasco, sometimes a whole bottle at one sitting. Now? a few random drops maybe LMAO AAAGh WHAT CRUELTY IS THIS??
I finally started adding a little hot here and there and just suffering anud i think it actually helped me build a little tolerance. not very much though, for the lover of habenero hot wings.

I'LL LET EVERBODY in on how this crunchy crispy chicken thigh recipe works out, thanks for the cook tips !!!

Yes!! We have to do lunch - I'd love that!! And I agree with you about the times changing. I remember having a 'really healthy fat free day' when I was 16 - when all I ate all day was marshmallows, fat free fig newtons and peach gummies. EEK!

Hi Em! I just saw that article. Interesting stuff. I believe that we just need to eat whole real foods, foods that are as close to their natural form. Once we start eating the processed stuff that is where we go wrong. Remember the fat free generation? Snackwells? I was part of that generation and I remember thinking that the stuff was gross and had a strange aftertaste, so I was not a fan. It was funny because you would see women gobbling them up at their desks all day raving about how much they could eat because they were fat free. I'm so glad my kids are growing up in a time when it's all about getting back to nature and natural organic foods. Convenience and processed foods are on their way out.

I am so happy I found your blog as well and if and when you return to the bay area, we have to get together for lunch! Keep the nutritional info coming!

Good question! And I just spent a while researching. Between the two I would doubt theres much difference.. I imagine thighs are higher in healthy fatty acids, because they are higher in fat, but both should be high in healthy proteins since they are both used in activities to help chickens move around. Interestingly the Nutrition Data site doesnt seem to think that dark meat is actually higher in any minerals (according to their stats) BUT a number of pieces, including papers put forward by 'chicken associations' as well as scholarly papers, allude to dark meat being higher in minerals... so I believe that. We usually get legs - which is both - but I prefer thighs, so treat myself to a pack of 4 of them sometimes. I usually eat thighs or legs and serve them crispy, and then just use breasts for some soups and salads!
