Amy! I love your comment!! :). And I remember reading about your sister now as well! Its funny you should mention the sugar thing as well because Im sure I do get the same thing from sugar. The thing is when I have one I tend to have the other - as you'll see from my WIAW I tend to eat pretty healthily during the week and most of my sugars come from dried fruit or maybe a bit of maple syrup or a sweet drink. I do eat dark chocolate at night I suppouse. But yep - I VERY rarely have refined sugars during the week (or apart from grains) and even the less refined ones - dates, dark chocolate etc - I always have after dinner when I tend to be feeling a bit tired from the day anyhow. I also have them in really small amounts so I don't think they affect me the next day.. like how a few squares of chocolate is really different to a bowl of pasta!
And then at the weekend (or dinners out) when I do have sugar I usually have grains as well. Also, I guess mentally I consider them sort of the same thing... like I dont really think of a nice biscuit or scone as being particularly worse than a piece of white toast with butter... refined carbs and sugar really arent that different. Does that make ANY sense as a response!? Anyhow reducing grains a bit can def be a fun challenge (NOT totally which I would HATE to do).. I would make plenty of use of beans, which I adore and are super cheap (although I know some people are also sensitive to them... and then I am a LOT lower on suggestions! :) ) xox

Hi Jennie! Interesting! Lou also commented about the same thing and maybe my focus has been in the wrong place. I do know I do way better with true sprouted bread than with regular bread. But thats sprouting rather than soaking... maybe soaking has less of an effect!? I'm also always aware of the placebo effect. I genuinely didn't think giving up gluten/ grains would have any impact so I FEEL like I must be being realistic. But then I know when I used do Fit For Life I genuinely felt like only having fruit in the morning/ separating carbs and protein etc was AMAZING. and now Im pretty sure it was crap :). So... who knows!?
And so interesting about the auto immune stuff. I do wonder about gluten in terms of how much its a question of gluten and how much its a question of food quality. Like when vegetarianism really took off as the most healthy thing to do... but really turned out to be a bit of a red herring, because it's not so much that meat is bad for as overeating it/ eating industrially farmed meat is bad for you. Grains, as we eat them today, are nothing like how we used to (just like meat and even dairy!). ALSO you know how nightshade veg are often really problematic for people with arthritis - and also other conditions - but VERY few people consider that to mean none of should eat them? So I wonder why gluten gets special treatment and whether is just a bit faddy (celiac excepted obviously!!!). But then I also DO sort of think that gluten probably IS a bit different!

Aw thanks Tricia! And Ive been loving reading about your experiments. However I THINK I like bean flours! I dont have much experience to be honest, but I remember using soy flour back in the day and really loving it for chocolate chip cookies!? But maybe my tastes have changed since then :)

Amanda - thats so interesting! I'd love to hear more about what led you to do the challenge. Blog post please! (Although I suppose it's all a bit retrospective now right...). Anyhoo - totally with you on loving grains. Ive always allowed myself to eat them at the weekends as more of a treat... even when I was being stricter about not including them regularly. It actually works out quite well because Ive found I can generally eat (and drink :) ) more of what I like on the weekends and still have energy.. like I can totally have a muffin for breakfast on Saturday and steam roll through the day, whereas if I did that on Monday before work/ school I'd just be crashing all day. And yep - I have tried quinoa porridge in the past and could never really get on board... are you a fan? xox

Hi Em! I love these nutritional posts as you know and I never think they are boring. You have the knowledge so why not pass it on, right? I like some of your readers, love complex carbs. I have tried to give up carbs for a week or longer and I am never satisfied. I think my body is addicted to them. I have switched over though from a daily bowl of grape nuts to a bowl of Ezekiel 4:9 (which is a golden flax sprouted whole grain cereal). I top it with flax seed, cafe fanny granola (yum) and some sort of fresh fruit. It satisfies me for hours. I love oatmeal but I tire of it after eating it 2 days in a row. I need something crunchy to go with my coffee.

I would love to hear more on sprouted grains as you learn more and I want to know how those cookies turned out.

OK, this is a bit off topic but I actually ate the most outrageous brownie yesterday while having lunch with my girlfriend. It was a dark chocolate brownie topped with a peanut butter frosting of some sort and then topped with chocolate gnache. OMG, it was out of this world and I am sure full of calories and all that bad stuff. It was so mouthwatering good though. I am going back there for lunch with Zoe since she has a lax game (your way, btw) and the cafe (Rustic Bakery) is on the way home. I have to take you there as well. Its right over the Richmond bridge so it would be an easy trip for you. The cafe is at Larkspur landing right next to the ferry terminal.
xoxo,
Jackie :)

Hi Amy,

I suffered from "head fog", and was told this was more to do exhaustion resulting from my life style, but i agree with you and Emilia that breads and refined sugars do have a lot to answer for.

I have virtually eliminated all grains and breads from my diet.

Anyway as a student one should never compromise ones health and nutrition, so if you want to live frugally, then make soups, steam food etc, by the way Heinz Baked Beans are not only cheap they are very nutritional to.

Best wishes.

Em, I really enjoyed reading this post (I agree with the others--not dull at all), and everyone's comments. It is really interesting. I have to admit I am guilty of being one of those people who have thought, "but people have survived off bread & grains for hundreds of years!" But I realize that is a bit naive, especially after reading this.

My older sister as I've told you is basically starch and grain intolerant and lactose intolerant as well. She can however eat yogurt just fine (like you said!). She's also the one that told me most people who are gluten free are grain intolerant in general, just because the way our body processes gluten is the same problems it has digesting refined sugars and other grains. Do you find you have any of the same symptoms of head fog and all that when you have refined sugars, too?

After reading this I think I'd like to at least try out reducing my dependence on grains. Especially being a student I tend to rely on them because they are so cheap and filling! Like Katie I'm not the most attune to my body but I would like to be better at that... anyway sorry for this novel of a comment but you got me thinking! Thanks for the post Em

Hi Emilia,

Totally agree with you we should not make grains the mainstay of our diet. All grains,(cereals), are simply the seeds,(embryo) of grasses. In the wild most herbivorous avoid eating grains as the high silica content of the bran grinds down the herbivorous teeth.

One should avoid whole grains as the bran also contains high amount of cyanide and ricin,( i think China is the only Country that regulates ricin content of whole grains and bran that is for human consumption).

Like i said if one is to incorporate grains into the diet then they should be sprouted steamed and added to soups or salads.

It should also be noted whole grains contain anti digestive enzymes, and by socking them in water do we not only make grains easier to swallow but germination enzymes in the grain are activated.

Wishing you all the best.
